I took the Challenge and, frankly I was surprised I had a score of 88% on first try then hit 100% on the 2nd try! Not bad! *patting self on back* Wahhaha! SOYJOY Challenge 3: What is LOW GI?

With all this talk about SOYJOY and its LOW GI factor.... What exactly is Low GI (Glycemic Index)? Lets explore this and at the end of this entry.. tell me if it was helpful in your understanding towards what LOW GI is about. And perhaps let me know if this would now help influence the type of food choices that you consume from here on?

The Glycemic Index was devised about 20 years ago by a Professor of Nutrition, Dr. David Jenkins. Researchers looked closer at the dietary recommendations for diabetics; which was to eat more complex carbohydrates (starch) because they took longer to process and digest than simple carbohydrates (sugar).

The glycemic index (GI) is a ranking of carbohydrates on a scale from 0 to 100 according to the extent to which they raise blood sugar levels after eating. Foods with a high GI are those which are rapidly digested and absorbed and result in marked fluctuations in blood sugar levels. Low-GI foods, by virtue of their slow digestion and absorption, produce gradual rises in blood sugar and insulin levels.

Low GI = 55 or less
Medium GI = 56 - 69
High GI = 70 or more

You get a bell-shaped curve when you eat food containing carbohydrates; the blood glucose rises and as your body produces insulin, it pushes the glucose out of the blood and into tissues, and then you see the blood-glucose level falling.

When eating high GI foods, you get a very high bell curve response with a dramatic drop. With a low-GI food, there is a slower and steadier rise in the blood glucose level.

Research has shown that very high glucose levels after meals, called glucose spikes, are damaging to our arteries and various blood vessels, and they promote far too much insulin to be around.

Eating low-GI foods means you avoid those spikes and dramatic falls in blood-glucose so you get a much steadier stream of energy. You, therefore, reduce your risk of heart disease and other chronic diseases that are implicated by those blood-glucose fluctuations.

How does LOW GI contribute to weight control?

High GI foods are bad for weight control for two reasons, the glucose spikes stimulate hunger because you are getting that dramatic drop in glucose, 90 minutes to two hours after eating. By eating low GI foods, you feel fuller for longer and are, therefore, not as likely to go searching for snacks every two hours.

Secondly, insulin is a storage hormone that stockpiles nutrients for later use by the body. A high-GI diet causes a lot of insulin to be produced and when you have too much insulin in your body too much of the time, it makes it easier to store fat and harder to burn it.

If your chosen weight loss plan leaves you feeling hungry then it will be even more difficult to resist eating between meals. GI eating promotes foods that raise your blood sugar slowly, so you won’t suffer from mid afternoon energy slumps that can leave you craving sugary snacks.

Getting a little scientific here... Foods that stimulate insulin surges can cause people to eat 60 - 70% more calories at the following meal! Low glycemic foods do not stimulate food-craving hormones like Neuropeptide Y and Lipoprotein Lipase. Stimulation of these hormones can cause chemically-triggered cravings for food and uncontrolled eating binges. Definitely something that we would like to keep under control!

Why do many high-fibre foods still have a high GI value?

Dietary fibre is not a chemical constituent like fat and protein. It is composed of many different sorts of molecules and can be divided into soluble and insoluble types.

Soluble fibre is often viscous (thick and jelly-like) in solution and remains viscous even in the small intestine. For this reason it makes it harder for enzymes to move around and digest the food. Foods with more soluble fibre, like apples, oats, and legumes, therefore have low GI values.
Insoluble fibre, on the other hand, is not viscous and doesn’t slow digestion unless it’s acting like a fence to inhibit access by enzymes (eg. the bran around intact kernels). When insoluble fibre is finely milled, the enzymes have free reign, allowing rapid digestion. Wholemeal bread and white bread have similar GI values. Brown pasta and brown rice have similar values to their white counterparts.

Many people make the assumption that since the amount of carbohydrate in the foods is the same, then the areas under the curve will finally be the same. This is not the case because the body is not only absorbing glucose from the gut into the bloodstream, it is also extracting glucose from the blood. Just as a gentle rain can be utilised better by the garden than a sudden deluge, the body can metabolise slowly digested food better than quickly digested carbohydrate.

Fast- release carbohydrate causes "flooding" of the system and the body cannot extract the glucose from the blood fast enough. Just as water levels rise quickly after torrential rain, so do glucose levels in the blood. But the same amount of rain falling over a long period can be absorbed into the ground and water levels do not rise. I believe this analogy makes for a very good reference to how your body assimilates High and Low GI food.

So tell me about common LOW GI Food options?

PASTA
Pasta has a low GI because of the physical entrapment of ungelatinised starch granules in a sponge-like network of protein (gluten) molecules in the pasta dough. Pasta is unique in this regard. As a result, pastas of any shape and size have a fairly low GI (30 to 60). Asian noodles such as hokkien, udon and rice vermicelli also have low to intermediate GI values. Pasta should be cooked al dente ('firm to the bite'). And this is the best way to eat pasta - it's not meant to be soft. It should be slightly firm and offer some resistance when you are chewing it. Overcooking boosts the GI. Gluten-free pastas based on rice and corn (maize) tend to have moderate to high GI values so opt for pastas made from legumes or soy.

POTATOES
The good news for potato lovers is that a potato salad made the day before, tossed with a vinaigrette dressing and kept in the fridge will have a much lower GI than potatoes served steaming hot from the pot. The cold storage increases the potatoes' resistant starch content by more than a third and the acid in the vinaigrette whether you make it with lemon juice, lime juice or vinegar will slow stomach emptying. The GI value of potato chips or french fries is lower than baked potatoes. Most potatoes tested to date have a high GI, so if you are a big potato eater, try to replace some with lower GI starchy alternatives such as sweet corn, yam or legumes.

BREAD
Try to increase the soluble fibre content by partially substituting flour with oat bran, rice bran or rolled oats and increase the bulkiness of the product with dried fruit, nuts, muesli, All-Bran or unprocessed bran. Opt for breads made from chickpea or legume based flours. Chapattis made with besan (chickpea flour) have a low GI.

Did you know that freezing slices of bread and popping them into the toaster the next morning, lowers the GI level of bread?

FRUIT & VEGETABLES
Temperate climate fruits - apples, pears, citrus (oranges, grapefruit) and stone fruits (peaches, plums, apricots) - all have low GI values.

Tropical fruits - pineapple, papaya, rockmelon and watermelon tend to have higher GI values.

Leafy green and salad vegetables are not measureable in terms of GI as they are very low in carbohydrate. GI Higher carb starchy vegetables include sweet corn (which is actually a cereal grain), potato, sweet potato, taro and yam, so watch the portion sizes with these. Pumpkin, carrots, peas, parsnips and beetroot contain some carbohydrate, but a normal serving size contains so little that it won't raise your blood glucose levels significantly.

NOODLES, GRAINS & LEGUMES/NUTS
Buckwheat (soba) noodles; cellophane noodles, also known as green bean vermicelli, are made from mung bean flour; rice noodles made from ground or pounded rice flour, are available fresh and dried. As for wholegrains, try buckwheat, quinoa, low GI varieties of rice such as basmati and sweet corn. Contrary to popular belief, brown rice does not have a lower glycemic index than white rice.

Legumes (pulses) including beans, chickpeas, whole and split dried peas and lentils. When you add legumes to meals and snacks, you reduce the overall GI of your diet because your body digests them slowly. Nuts are high in fat (averaging around 50 per cent), it is largely unsaturated, so they make a healthy substitute for foods such as biscuits, cakes, pastries, potato chips and chocolate. They also contain relatively little carbohydrate, so most do not have a GI value. Peanuts (actually a legume) and cashews have very low GI values.

DAIRY
Low fat dairy foods and calcium-enriched soy products low fat milk, yoghurt and ice-cream or soy alternatives provide sustained energy, boosting your calcium intake but not your saturated fat intake.

How can LOW GI choices affect my health?

Apart from its physical *weight loss or weight maintenance* and emotional & psychological benefits that the properties of GI choices provide, individuals who followed a Low GI diet over many years were found to have a significantly lower risk for developing and/or controlling both type 1 & type 2 diabetes, hypoglycemia, hypertension and coronary heart disease.

So with all these benefits... using this knowledge of Low GI, we can now make more informed and preferred food selection in our daily lives. Snack wise, SOYJOY can be an excellent alternative to your other "sinful" non beneficial snack choices that your body will thank you.

Henna-ed!

I got Henna-ed! There was an art fest over at the National Library today where Lauren had to attend because she is part of the schools' art club. They had about 12 booths that were manned by different primary schools.

Each of them showcasing different art activities such as henna *thus my first ever henna hand drawing*, caricaturing, beading, masking, painting, balloon sculpturing and cellophane sculptures along with an art competition. Very fun lah! And almost everything was free too! We only paid for some crystals at $1.20 per pack for her to make jewellery.

For now, the Henna design was created by a man armed with the henna tube. We waited about 30 minutes for it to dry out then they dripped lemon juice all over it to "rehydrate" the paste and it took another 20 minutes or so to dry out totally and then I rubbed the crackly paste off to reveal the design under... was told it would last around 1.5 to 2 weeks?

Anyway.. I like it. :) It showed so nicely as it was a hand focus and when I ran some salsa arm moves in class this evening... I caught sight of it - very pretty!! Am tempted to buy a tube for myself and do a little henna on myself! Anyone up for a Henna party?

Mini Ngoh Hiang Rolls

After you read this post, please GO TO THIS POST or just continue reading below for my "How I like my SOYJOY best" challenge no. 2 and leave me a comment there! Really appreciate it! And it would help the challenge along too to hear what you have to say... choose a picture or just say Hi!

My Mom in law made mini Ngoh Hiang aka meat rolls today. We wanted to make some kind of atkins friendly wanton but the beancurd skin didn't hold well together wanton style so she made rolls instead and it was *ssslluurrrppingly* yummy. Even more food that you eat and LOSE WEIGHT!! Very high in protein and low in carb.

UPDATE: Oh! Instead of putting this as a separate post. Atkins weightloss update! I'm now 67.5kg!! Last weigh in at 68kg can be found HERE! Whooott!!

Whats in it? All based on estimates only. Makes 30 mini rolls.

Salt & White Pepper to taste.
1 Egg.
1 tsp cornflour
10-12 diced large shitake mushrooms
8o0 grams of Minced Pork
1 Sheet of Beancurd skin cut into 8' x 8' size squares.

Season meat & add mushrooms. Put 2 tablespoons of meat into each beancurd skin and roll like a spring roll. Seal with a starch water mix (starch + hot water to make a sticky "glue").

So what you see here is how the rolls look like raw. Heat up the pan with vegetable oil and when hot, add a teaspoon of salt into the oil & stir *this will help minimise oil splatter* then fry up the rolls till golden brown. Turn the rolls till all sides are crispy.

Drip off the oil and serve hot & crispy with chili sauce and black sweet sauce. *drools*

How I like my SOYJOY Best - Challenge 2

It is Week 2 of the SOYJOY GI Challenge and this weeks' challenge is a picture challenge to show.. "How I like my SOYJOY best!"... First Week Challenge details can be found HERE.

I want to thank everyone who participated with me in listing your company to recieve FREE SOYJOY bars! Thank you for your support! ... :) Challenge No. 1 is now CLOSED.

Now for this challenge.. I thought about this for quite a while... and in line with my kind of preferences and lifestyle. I found that I would have liked to marry my love of felines thus.. my nickname "Honeymeow" with comfort food and an active lifestyle to represent how I like my SOYJOY best...

Above there... the kitty having a nibble on a SOYJOY bar... no.. SOYJOY IS NOT pet food but pets love it too! I know because I've tried feeding it to the cats I love and they ate it with much gusto! BUT... its NOT pet food okay! And Don't feed Chocolates to Cats! It gives them respiratory distress...

Then I wondered.. how else other than just opening the pack and nibbling on it can I enjoy the bar? Dunked with coffee like a biscotti side treat? Yes.. Dunked in chocolate fudge maybe! Hell yeah!! But it also kinda defeats the purpose of the low GI factor by adding so much sugar to "compliment" it. But those still sound awesome don't they?! I tried these combos too.. not bad!! *slurps*

So I tried it with some low fat Frozen Yogurt and chopped up a chocolate orange SOYJOY bar and used it as toppings and threw on some of my favourite red heart toppings for colour.. Visually, it was pretty enticing. I threw it into the freezer for an after dinner treat and a treat it was indeed! The bar bits dried out just a little bit making it a little crunchier at the ends which gave it excellent texture for people like me who love chunky yogurt/icecream treats!

And it was really satisfying too! I'd definitely use this combo again soon!

And then coming back to my feline loves... I thought it would be highly representative of me to show how I love SOYJOY through these uber cute furries who "help" me show my SOYJOY message of...

and a "Little Effort!!" - Act cute for Food Kitty... Awww... Shooo cuute.. I like! *rubs screen* ....

But as it all culminates to a final picture that I would feel that taking a product such as SOYJOY, pulling into factors that it is based on a LOW GI formula *what? what is low GI? - Find out next week! I will be telling you more about this then"!* and that it makes an excellent snack alternative. I feel that an active, healthy lifestyle would best represent how I like my SOYJOY best..

With the company of some of my friends, after a great workout... my own ZumFit dance class nonetheless.. with our bars that helped us sustain a great satiety and energy to last the class through and to provide a non greasy, non sinful, filling treat after... Yep.. thats how I like it... *I'm proud to allow association with my ZumFit program with SOYJOY as they both work towards the promotion of healthier lifestyle choices*

Do You Know How to Kill a Crab?

I didn't know how and it brought up a hilarious memorable experience for CJ and me some many years back.

We wanted to make our own Chili Crab and went to the market to buy some live crab. When we reached home and threw them into the sink. We cut open the rope that held their claws together. Mistake!

The crabs started crawling about the sink and in the midst of my flapping arms and squealing panic, CJ grabbed a kettle of boiling water and poured it over the crabs and to our horror.... ALL THEIR LEGS DROPPED OFF!!

What the.... *both of us standing there staring in shock...* was that supposed to happen??!

And then seeing that the crabs weren't totally dead yet, CJ took the knife and started stabbing the crabs a couple of times but they were still spasming. Oookay.. we took the tongs and put the bodies and dismembered claws into a plastic bag and did the next thing we could.

We shoved the bag into the freezer to freeze them buggers to death... *facepalm* Such inexperience indeed...

Some years down the road and several chili crabs/butter crabs and pepper crabs dishes later.. I've become quite adept in killing, cleaning and preparing the crabs for cooking. I never fail to get some puncture wounds while in the process of doing so however. Them crabbies are sharp and painful!! *ouccch!!*

Crabs can cost from $5-$15 per piece at the wet market.
Usually they're weighed in according to kilos. I prefer to choose larger hard shelled *greenish/orange/grey coloured* versions as opposed to flower crabs *spotted/light green/flowery patterned* or softer shelled small black/brown crabs.

How to kill a crab is actually quite easy. Ensure the claws are still tied or it will put up a fuss. Flip the crab over, open up its "flap". Take a chopstick or a knife and stab it right in the centre aka "its heart" and leave it there for a couple of minutes. It will die in a few minutes.

Before you decide to snip off the string tying the claws.. ensure its dead first, proceed to slot a knife into its base and pry off its top shell.. you can then break the crab in half.

Clean up the "lungs" and excessive spiky parts. Scrub with a brush and water and use a mortar to crack the shells before proceeding to cook as per which ever recipe you have chosen for your dish. My mother in law cooked tonights' Chili Crab but I'm sure there are many recommended recipes you can google up to try. :) *Slurps*

Oh! And yes, would I consider this something I'd eat to lose weight? YES!! CRAB! = Seafood! = High protein = Low carb = Lose weight? = YES!! Just that I won't be slurping up too much of its gravy and definitely won't be dipping bread into this dish anytime soon. Still good though! Finger lickin' Good!

ZumFit with Me on Friday Nights!

Tonight's ZumFit class was cosy but it was quite an enjoyable 75 minute run. 15 tracks. Today was a special class as I had the flexibility of starting the class 15 minutes earlier so we used all available time!

Cheesy Salsa Pockets (Low Carb!)

This is my version of a Low Carb alternative to pizza in my house without its bread base. Its EXTREMELY satisfying, wholesome, full of nutrition and best of all LOW IN CARB!

You know what they always say.. choose what you eat.. you are what you eat and I say, you eat this AND LOSE WEIGHT. With a reasonable exercise plan of course!

I love it when people come to realise that low carb food options are not as boring as they think! I've heard many "YOU EAT THAT.. and STILL LOSE WEIGHT?"... with much disbelief...

Yeah!..(Looks at self.. kinda proof in the pudding ain't it?)... no?

So this is one hair raising, eyeball rolling satisfactory lunch or dinner option to have that prepares in 5 minutes, bakes in 15 mins (chicken) + 20 mins(peppers). Yeah.. we actually had goosebumps and sat there chewing in a daze..If my eyeballs could roll to the back of my head and back around... it would have... It was THAT GOOD. Seriously. Please try it!

So whats in this?

A bag of Japanese Seaweed Chicken Nuggets (Baked till crispy)
3 Large Red Capsicums (sweet red bell pepper) - Sliced in half and de-seeded.
6 Slices of Cheese
1 bottle of HOT Salsa Mix (I used Tostitos Salsa which you can find at Cold Storage)
Black/White Pepper & Italian Seasoning to taste.

Hows it done?

Bake nuggets till crispy while you prepare the peppers.

I used 3 very large red bell peppers and lined the insides of each half with a slice of cheese each. When the nuggets were baked, I cut them up into pieces and stuffed the peppers with them. Around 3.5-4 chopped up nuggets can stuff each pepper.

Covered the top layer with a spoonful of Hot Salsa and returned the raw stuffed peppers into the oven to bake for about 20 minutes till the sides started to brown, the pepper was visually softer and the cheese started to bubble.

When serving, I topped it with another spoon of fresh cold salsa as the previous scoop had baked into the crispy chicken and then seasoned to taste.

It was easy to eat as you could either cut it up with a fork or pick it up just like how you would a slice of pizza and sink your teeth into it. It was seriously very yummy and I will definitely do this again soon. Enjoy! Tell me or even better... show me how yours turned out if you make it! *slurps*
